Susu’s Passover Kugel

5 eggs

½ cup sugar

¾ cup apricot juice from a can of apricots

1 pint sour cream

1 teaspoon salt

1 stick melted butter

1 #2 can peeled apricots, reserve juice 16 oz

1 tart granny smith apple, peeled & chopped

3 cups (1/2 box) soaked matzo falafel (or 1.5 pounds noodles)

½ cup brown sugar and cinnamon for topping

  1. Preheat oven to 375.
  2. Pour boiling water over farfal and drain.  Mix apple with farfal.
  3. Combine eggs, sugar, apricot juice, sour cream, butter, salt.  Beat lightly together. Mix farfal, apple with above
  4. Put into 9×13 pyrex baking dish.  Arrange apricots with rounded part up on top. Sprinkle with brown sugar mixture.
  5. Bake covered at 375 for 45 minutes to an hour.  May need to remove cover toward end to brown.
