Basic Crepes

1 egg

1/4 cup water

1/4 cup milk (I use skim)

1/8 teaspoon salt

1/2 teaspoon vanilla

1 tablespoon melted butter (I use canola oil instead)

1/2 cup flour

1/2 teaspoon sugar

Preheat a skillet to medium heat.

Whisk egg, water, milk, salt  vanilla, and oil or melted butter together until thoroughly combined.  Add flour and mix again.  Add sugar and mix until no lumps exist.

Pour 1/4 cup of batter into skillet and swirl around to form an even crepe.  Let cook until just starting to turn brown on the bottom – about a minute or two.  Flip and cook another minute or so.

Top with whatever – our favorites are nutella and banana, with a bit of powdered sugar on top.
